There’s a lot of other great stuff in the issues, like Cathy Erway’s story about Taiwan! All the gorgeous photos are by Lauren Volo.

Sambuseh, crispy phyllo triangles stuffed with farmer’s cheese and cilantro, with spicy relish, nigella seeds

Dal adas, red lentil soup with ginger, curry, and tamarind

Gheymeh Nessar, lamb cooked with barberries and pistachios

Kalam polo, rice with cabbage and meatballs

Jujeh kebab, chicken kebab with saffron and lemon

Jigar, lamb liver kebabs with fresh basil

Mast-o khiar cucumber yogurt, and sabzi khordan herb, lavash, and cheese plate

Akhte Iskamoo, salty sweet cherry plum popsicle with angelica

Damnoush, hot herbal tea made with cinnamon, cardamom, borage
